From time to time we all need a helping of comfort food.
Tee Hee asked for my Parkin Recipe. Actually it's my sister-in-laws. I wasn't sure where to put it so started this new thread. Apologies for not having gone metric yet!
PARKIN
8 oz plain flour }
half teaspoon bicarb of soda } sieve these dry ingredients together
2 teaspoons ground ginger }
1 teaspoon ground cinnamon }
4 oz medium oatmeal - add this to sieved ingredients.
4 oz butter or hard margerine
4 oz dark brown sugar
5 oz black treacle ( I used tablespoons to measure - approx 1 per oz)
2 eggs
quarter pint milk
METHOD
Put marge, sugar & treacle in a pan and melt carefully. Add to dry ingredients, beat well. Add milk and eggs.
Beat until well combined. Pour batter into a greased lined 8" square tin.
Bake in centre of oven gas mk 2-3 for 50-60mins.
Ideally it's best kept for a couple of days before eating. This gives the flavours time to mature and the parkin to develop a yummy sticky top.
I was searching for comfort food recipes on the forum and found this thread.
My favourite comfort food is Rava Upma, a south Indian recipe. Since Rava Umpa is high in carbohydrates, I prefer the following low-carb version of it.
Cauliflower Upma
Ingredients
1 tbsp Ghee or Butter or Oil
4-5 Curry leaves
1 tsp Chopped Ginger
1/4 tsp Mustard seeds
1/4 tsp Cumin seeds
1 tsp Turmeric powder
1 tbsp Peanuts optional
1 Green chili chopped, adjust to taste
1/4 Cup Onion, chopped
1/4 Cup Tomato, chopped
1.5 cup Cauliflower, riced
Salt to taste
Few pinches of black pepper to taste
Lime juice to taste
Cilantro, chopped for garnish
Instructions
Take a frying pan or cooking pot and put that on a stove on medium heat.
Add ghee into the pan, once the ghee is hot, add in mustard seeds, cumin seeds, ginger, curry leaves, and peanuts one by one.
Fry the mix till the peanuts turn golden brown.
Now, add onion, green chilli and fry them till they look translucent.
After this, add tomatoes into the pan and cook them till they turn soft and mushy.
Now add diced cauliflower and salt according to your taste. Mix well.
Cook the cauliflower with the lid on or just on full flame. I cooked it with the lid on as it’s quicker.
Once the cauliflower is cooked as you like it, add pepper, lime juice, and salt if required. Mix with a soft hand and garnish with Cilantro and Serve Hot!
