Dried Fruit Compote

I eat this for breakfast, with some granola and yogurt, as part of a high fibre diet. It is a very good and easy recipe, so I thought I’d share it:

Ingredients:

1 cup dried prunes
1 cup dried apricots (preferably the brown kind, but yellow will do)
1 cup other dried fruit (raisins, mango, apple, pears, figs etc., in any combination)
Half a cup of sugar.
Quarter teaspoon of mixed spice
Strip of lemon peel.

Put the dried fruit into the saucepan, cover with water and bring to the boil. Reduce heat and simmer for ten minutes.
Add the spice, sugar and lemon peel, and simmer for another ten minutes.

Eat hot or cold.
